One of the biggest culinary surprises I had during my 3-year stint living in New York City was discovering Spinach & Artichoke dip. Both are great ingredients individually but combine them and wow — talk about better then the sum of its parts!
I was such a fan that over the next few years I attempted to work those beautiful flavors into an array of other dishes. That process lead me to these easy, quick and delicious Mini Quiches.
Perfect as an appetizer, lunchbox-filer, party-sharer, afternoon snack and, well, for almost all occasions. Plus, given their somewhat low calorie content and decent protein count, they’re not too shabby for you either. Win win.

You’ll notice that we’d used muffin trays because we like a bitesize treat, but these beauties work just as nicely in bigger trays or as one large quiche. Whatever takes your fancy.
